As for local fiestas, the most outstanding is the 'Carnavales de Águilas' - the Carnaval of Águilas, declared of National Tourist Interest. This takes place in February and its' origin is lost in antiquity. It is said, 'Carnival is a period of renovation, when disorder reigns - only to be restored at the end of the fiesta'. Águilas is Carnival and the whole town turns out to offer one of the nations's greatest spectacles.

An absolute must for the gourmet is the savouring of the vast variety of fish, sea-food, ans salted fish and meats. These are served raw, albeit delicately cured, dried or sun-breeze dried. all manner of forms are employed to cook and prepare the foods ina harmonic combination with the famous Murcian market-grown produce. Of particular note is the magnificent tomato, native of Águilas, and the exquisite and varied rice dishes.
